2 large ripe tomatoes

4 slices white bread

4 tbsp mayonnaise

Balsamic vinegar, as needed (optional)

Slice the tomatoes into ½-inch-thick slices. Season with salt and let sit 10 min. Meanwhile, toast the bread.

Spread 1 tbsp mayonnaise on one side of each slice of bread. Divide tomato slices between 2 bread slices and season with pepper. Drizzle with a little balsamic vinegar, if desired. Place remaining 2 slices bread on top, mayonnaise-side down, and cut sandwiches in half. Serve immediately.
Tips
You can dress up this sandwich by stirring a little jarred pesto into the mayo or adding a couple slices of sharp Cheddar or crispy bacon.
