Fruit Sandwich

This fun, fruity snack is inspired by the viral Japanese fruit sando. Fresh berries, clementine segments and kiwi rounds are tucked between slices of soft white bread with a creamy layer of whipped cream. Cut the sandwich in half to reveal a colorful mix of fruit surrounded by sweet cream and fluffy bread.

Ingredients

> 1 cup cold heavy cream
> 1 tbsp sugar
> 4 white thick sliced bread, crusts removed
> 4 - 5 strawberries, hulled
> 4 blackberries
> 1 clementine, peeled and patted dry
> 2 kiwis, skin removed, and patted dry

In a large bowl, using an electric hand mixer, beat the heavy cream and sugar together until stiff peaks form. Transfer whipped cream to a piping bag and cut off a large tip.

Pipe a thin layer of whipped cream over two slices of bread, leaving a ¼-inch border. Top 1 slice of bread with an even layer of strawberries and blackberries, keeping in mind that you will be cutting along the diagonal and showing off cut sections of fruit.

Top the remaining slice of whipped cream bread with clementine and kiwi, keeping in mind that you will be cutting along the diagonal and showing off cut sections of fruit. Pipe a thin, even layer of whipped cream over the fruit on each sandwich, filling in any gaps. Top with the remaining slices of bread.

Wrap each sandwich in plastic wrap. If desired, mark the diagonal cut line with a small piece of tape or a food-safe marker as a guide. Refrigerate for at least 1 hour or overnight. Unwrap sandwiches and cut along the diagonal line.
