Cuban-Style Black Bean Dip with Plantain Chips

This Cuban-inspired no-cook recipe comes together in just 10 minutes and with only 5 ingredients. Topping it with cotija takes it over the top.

Ingredients

> 2 (15.5 oz) cans low-sodium black beans
> 1/4 cup jarred sofrito
> 1 tsp ground cumin
> 2 tbsp Cotija cheese
> Plantain chips, for serving
> Chopped cilantro (optional)

Steps

To a food processor, add the black beans, sofrito, and cumin. Season with salt and pepper. Pulse until combined, adding 2 to 3 tbsp water if needed for a thinner consistency.

Transfer black bean dip to a bowl. Refrigerate if desired until ready to serve. Top with the cotija cheese and serve with the plantain chips. Garnish with chopped cilantro, if desired.
