Baked Salmon with Crispy Kale

Kale becomes irresistible when crisped in the oven, especially if it's paired with spice-rubbed salmon and fresh orange juice like in this easy 5-ingredient sheet pan dinner.

Ingredients

> 1 (5 oz) pkg baby kale
> 3 tbsp olive oil, divided
> 4 (6 oz) salmon fillets
> 1 tbsp chili powder
> 1 small orange

Preheat oven to 400°F. Line a large sheet pan with parchment. Place the kale in a large bowl.

Add 2 tbsp oil to kale. Season with salt and pepper. Massage oil into kale and arrange in an even layer on prepared sheet pan.

Add the salmon and remaining 1 tbsp oil to same bowl used for kale. Turn salmon pieces over to coat evenly in oil.

Arrange salmon fillets in single layer on top of kale. Rub salmon with the chili powder. Season with salt and pepper. Roast 12–15 min., until salmon is cooked and kale is crispy. To serve, squeeze juice from the orange on top.
