5-Ingredient Enchiladas

These easy one-pan enchiladas use supermarket favorites like shredded cheese, frozen taquitos, and enchilada sauce to make this hearty, kid-friendly casserole. No chopping is necessary!

Ingredients

> 1 (16 oz) can refried beans
> 18 - 20 ct frozen beef and cheese or chicken and cheese taquitos
> 1 (10 oz) can mild red enchilada sauce
> 1 (8 oz) bag shredded Mexican-style cheese blend
> 1 cup fresh pico de gallo

Preheat oven to 375°F. Lightly grease a 9x13-inch baking dish with cooking spray. Spread the beans into an even layer on bottom of dish. Arrange the taquitos in a single layer over beans.

Pour the enchilada sauce evenly over taquitos. Sprinkle the cheese over top in an even layer. Cover the dish with foil. Bake 25–30 min., then remove foil and bake an additional 5–8 min., until cheese is bubbly and golden. Spoon the pico de gallo over top and serve immediately.

Tips

If desired, garnish with chopped cilantro.
