Air-Fried Chicken Drumsticks with Mashed Peas

Sweet frozen peas and riced cauliflower are shortcuts to a simple side that pairs perfectly with crispy air-fried chicken in this affordable family-friendly dinner.

> 2 tsp smoked paprika
> 1 tsp onion powder
> 8 chicken drumsticks (about 2 lbs)
> 1 (12 oz) bag frozen peas
> 1/2 (12 oz) bag frozen cauliflower rice
> 1/4 cup low-fat milk
> 2 tbsp butter


Preheat air fryer to 400°F. In a medium bowl, combine the paprika, onion powder, and oil. Season with salt and pepper. Add the chicken and toss until well coated.
Arrange chicken in air fryer, spacing out evenly. Close air fryer lid and cook 20–25 min., turning chicken over once halfway through.
Meanwhile, in a medium pot, heat the peas and cauliflower on medium, until thawed. Add the milk and butter and cook until butter melts. Transfer mixture to a food processor and pulse until mostly smooth (alternatively, use an immersion blender directly in pot). Return to pot and season with salt and pepper to taste. Keep warm and serve with chicken.
