Air-Fried Chicken Taquitos

Ingredients

> 1 cup shredded rotisserie chicken
> 1/4 cup reduced-fat cream cheese, room temperature
> 1/2 cup reduced-fat 4-Cheese Mexican shredded cheese blend
> 12 mini flour or street taco tortillas
> Cooking spray

For Serving (Optional):

> Mild salsa
> Sour cream
> Guacamole

Preheat air fryer to 375°F. In a small bowl, combine the chicken, cream cheese, and shredded cheese. Wrap the tortillas in a damp paper towel and microwave 10 sec., until soft and pliable.  Spread 1½ tbsp chicken mixture down center of each tortilla. Fold each tortilla over itself and roll into taquito shape.

Add taquitos seam-side down to preheated air fryer, making sure they are not touching, working in batches if necessary. Spray taquitos with the cooking spray. Cook 6–7 min., until golden and crispy. Flip taquitos and spray again with cooking spray. Cook 4–5 min., until crispy. Serve with salsa, sour cream, and guacamole, if desired.

Tips

To serve later, refrigerate in an airtight container for up to 5 days or freeze up to 2 months.
