Air Fryer Squash Curly Fries with Za’atar

Using an air fryer makes these veggie curly fries lighter and extra crispy. Toss them with za’atar, a Middle Eastern spice blend, for an easy vegetarian side dish or appetizer.

Ingredients

> 2 medium zucchini
> 2 yellow summer squash
> 1 cup all-purpose flour
> 2 large eggs
> 1 cup panko bread crumbs
> 2 tbsp za'atar seasoning or dried thyme
> Cooking spray
> 1 cup nonfat Greek yogurt
> 1 tsp chopped fresh parsley
> 1 lemon

Using a spiralizer fitted with the large shredding blade, cut the zucchini and summer squash into spiral noodles. Coarsely chop noodles into 5-inch pieces.

Preheat air fryer to 400°F. To a shallow dish, add the flour and season with salt. To a separate shallow dish, add the eggs and beat lightly until smooth. Combine the bread crumbs and za’atar seasoning in a third shallow dish.

In batches, dredge squash noodles in flour and shake off excess. Repeat process with eggs and bread crumb mixture. Spray air fry basket with cooking spray and arrange fries in basket, making sure not to overcrowd. Spray top of fries lightly with cooking spray.

Cook 10 min., until crispy, shaking halfway through. Meanwhile, in a medium bowl, combine the yogurt and parsley. Zest half the lemon and squeeze 2 tsp lemon juice into yogurt mixture. Transfer fries to a paper towel–lined dish. Repeat dredging and cooking process with remaining squash noodles. Serve fries with yogurt sauce.

Tips

If you don't have a spiralizer, you can also use 1 (16 oz) pkg fresh squash noodles.
