Ingredients

> 1/2 (15 oz) box pie crust, thawed
> 8 large eggs
> 3/4 cup cottage cheese
> 1 cup shredded cheese
> 1 cup chopped leftover cooked meat
> 1 cup diced bell peppers
> 1/4 cup diced red onion
> 1 cup fresh spinach or any other greens (chopped, if needed)

Cottage Cheese Substitutions:

> Plain yogurt
> Sour cream

Shredded Cheese:

> Cheddar
> Pepper jack
> Parmesan
> Crumbled feta

Meat:

> Ham
> Turkey
> Salami
> Bacon

Preheat oven to 350°F. Arrange the pie crust in a 9-inch pie plate. Crimp edges of dough with a fork.

Meanwhile, in a large bowl, whisk together the eggs, cottage cheese/yogurt/sour cream, and cheese. Season with salt and pepper. To bowl, stir in the cooked meat, bell peppers, red onion, and spinach.

Pour egg mixture into pie crust. Bake 45–55 min., until center is just set. Halfway through cooking time, cover entire quiche with foil. Let quiche cool slightly before serving.
