In a 12-inch skillet, heat the oil on medium-high. Season the pork with salt and pepper and add to pan. Cook 6–8 min. per side, until cooked through. Transfer to plate.

Meanwhile, thinly slice the green onions. Reduce heat to medium and add green onions to empty skillet. Cook 1 min., stirring. Stir in the mustard, jam, and pepper. Cook 1 min., scraping up any browned bits. Serve pork chops with sauce.
