6 cups watermelon chunks

2 green onions

1/2 cup pimiento-stuffed olives, drained

2 oz Cotija cheese

1/2 (5 oz) pkg baby arugula

1/4 cup pepitas

2 tbsp olive oil

Cut the watermelon into smaller cubes and place in a large bowl.

Thinly slice the green onions and olives. Crumble the cheese. Add green onions, olives, cheese, arugula, pepitas, oil, salt, and pepper to watermelon and toss to combine. Serve immediately.
