Soy Sauce–Marinated Silken Tofu with Rice

Marinating tofu infuses tons of flavor with little effort. Add more plant-based protein into your weeknight routine with this inexpensive option.

Ingredients

> 1 (14 oz) pkg silken tofu
> 2 tbsp low-sodium soy sauce
> 1 tbsp rice vinegar
> 1 tbsp sesame oil
> 1 tsp granulated sugar
> 1 tsp Nature's Promise® Sriracha Hot Chili Sauce (optional)
> 1 tsp sesame seeds
> 1/3 cup finely chopped green onions
> 1 (15.9 oz) pkg Nature's Promise® Precooked Brown Rice
> 1 (10 oz) Nature's Promise® Steam-in-Bag Broccoli

Carefully open and drain the tofu. With tofu still in the container, slice into cubes. Transfer tofu to a resealable container.

In a small bowl, combine the soy sauce, vinegar, sesame oil, sugar, chili sauce (if using), and 2 tbsp water. Stir until sugar is dissolved. Stir in the sesame seeds and green onions. Pour soy marinade over tofu so it is completely covered. Refrigerate at least 1 hour, or up to overnight.

When ready to serve, microwave the rice and broccoli according to package directions. Divide rice and broccoli among 4 bowls. Carefully remove tofu from marinade and place over rice. Spoon marinade over tofu and rice.
