Ingredients

1/3 cup sesame seeds

1 orange

1 lemon

6 oz carrots

1/2 head napa cabbage

6 green onions

1 1/2 inch piece fresh ginger

2 tbsp honey
>
2 tbsp sesame oil

1/3 cup unsalted peanuts

Toast the sesame seeds in a frying pan without oil or butter for 3 minutes until golden brown. Let cool on a plate.

Juice the orange and lemon.

Peel the carrots. Cut in half lengthwise, then cut into thin slices. Cut the Napa cabbage into thin strips.

Cut the green onions into rings. Peel and grate the ginger.

Mix the ginger with the orange juice, lemon juice, honey and sesame oil. Add the carrots and season with salt and pepper. Let sit for 30 minutes.

Drain the carrots in a colander or sieve, reserving the dressing.

Toss the Napa cabbage with the onions, carrots and dressing to taste. Season with salt and pepper.

Chop the peanuts coarsely. Sprinkle the salad with the sesame seeds and chopped peanuts.
