Caprese Stuffed Broiled Avocados

> 4 ripe avocados
> 1 pint cherry tomatoes
> 1 cup croutons
> 1/4 cup diced red onion
> 1 tsp olive oil
> 4 oz mozzarella
> 6 fresh basil leaves


Preheat oven to high broil and set rack 8 inches from the top of the oven. Cut the avocados in half lengthwise and twist open to release. Remove the pits. Enlarge the cavities left by the pit by scooping with a small spoon, leaving a half inch ring of avocado flesh around the skin. Place scooped avocado in a large bowl.
Halve the cherry tomatoes and add to the bowl with the avocado. Crush the croutons into small chunks and to the bowl with the red onion. Thinly slice the basil and cut the mozzarella into small cubes and add to the bowl. Toss all indgredients until well mixed. Scoop mixture into avocado and place on a baking tray.
Broil for 2-3 minutes or until mozzarella is melted and tomatoes are lightly charred.
