Avocado Green Goddess Chicken Salad

This update of the classic creamy green dressing gets a boost from avocado. Toss this sauce with rotisserie chicken for an easy no-cook salad.

Ingredients

> 1 rotisserie chicken or 3 to 4 cups shredded cooked chicken
> 1 ripe avocado, peeled and cubed
> 1/4 cup nonfat plain Greek yogurt
> 2 tbsp mayonnaise
> 1/2 cup fresh parsley leaves
> 1/4 cup chopped chives
> 2 tbsp fresh tarragon leaves
> 1 small clove garlic, minced
> 2 tsp lemon juice

To Serve:

> French or Italian bread
> Celery sticks
> Sliced cucumber
> Sliced carrots

If using rotisserie chicken, remove the chicken meat from bones and shred. To a food processor or blender, add the avocado, yogurt, mayonnaise, parsley, chives, tarragon, garlic, lemon juice, and 1 tbsp water. Season with salt and pepper. Purée until smooth.

To a medium bowl, add the chicken and toss with half of dressing. Season with salt and pepper. Add more dressing as desired. Eat immediately, or chill until ready to serve. Serve with the crusty bread or vegetables. Save remaining dressing for another use or serve as a dip.
