Bagel with Green Eggs, Sausage, and Cheese

Spinach makes your eggs green in this wholesome, fast sandwich that’s hearty enough to keep you going until lunch time.

Ingredients

> 4 fully cooked breakfast sausage patties
> 2 cups fresh spinach
> 4 large eggs
> 4 bagels thins, split
> 2 tbsp butter
> 4 slices cheddar cheese

Warm sausage patties in the microwave according to package directions. Meanwhile, mince spinach and set aside. Beat eggs together in a large bowl with salt (in moderation) and pepper.

Toast the bagel thins. Divide and spread 2 tbsp butter evenly among the bagel halves. Cover to keep warm. Meanwhile, heat 1 tbsp butter in a nonstick skillet. Sauté spinach until soft and wilted. Place in a colander and press with a wooden spoon to release any moisture. Add remaining butter and return spinach to skillet.

Add the whisked eggs to the spinach and cook, stirring constantly until set, about 5 min. Divide sausage patties and green eggs among 4 bagel halves. Top each with a slice of cheese. Finish with remaining bagel halves and serve immediately.
