4 (6 oz) mahi-mahi fillets

2 tbsp Dijon mustard

2 tbsp honey

1/2 cup shredded coconut

2 medium sweet potatoes

2 tbsp coconut oil

Preheat oven to high broil. Slice the sweet potato into ¼ - ½ inch thick rounds and place on a baking sheet. Brush with coconut oil and season with salt (in moderation) and pepper. Broil for 4-5 minutes per side or until lightly charred and a fork can be inserted into the potato without resistance.

Meanwhile, place mahi filets onto a baking pan and season with salt (in moderation) and pepper. Broil fish for 6-8 minutes or until it easily flakes with a fork. Remove from oven and mix together the Dijon and honey mustard. Brush on filets and sprinkle with shredded coconut. Return to broil and cook for 30-60 seconds, watching carefully so the coconut does not burn.

Serve fish on top of sweet potatoes with extra honey mustard, if desired.
