Barramundi with Lemon and Basil

Often the simplest preparation is most delicious, especially when it comes to the delicate flavor of white fish. A shower of lemon juice, minced garlic and basil dresses the fish, allowing its natural taste to really shine. This makes an elegant and low-stress main course for a romantic dinner.

Ingredients

> 12 oz package Barramundi fillets, thawed
> 1 tbsp olive oil
> 1 clove garlic
> 2 tbsp fresh lemon juice
> 4 leaves fresh basil, minced (or 3/4 tsp dry)
> Salt to taste

In a small pan, heat 1 teaspoon of olive oil, add garlic and gently sauté for about 2 minutes. Stir in lemon juice and basil, add salt to taste. Remove from heat. Heat a large frying pan over high heat. Brush fillets with remaining olive oil and add to pan. Fry one side for 2 minutes, then flip and cook on other side 2–3 more minutes or until fish is cooked through. Transfer to serving dish. Spoon sauce over fillets.
