Berry Skewers with Cheesecake Dip

These easy dessert skewers take advantage of the juiciness of summer berries. Serve them with a quick cheesecake dip and store-bought pound cake for a decadent patriotic treat that does double duty for Memorial Day and Fourth of July.

Ingredients

> 1/2 (8 oz) pkg reduced-fat cream cheese
> 1 lemon
> 2 tbsp confectioners' sugar
> 1 tbsp low-fat milk
> 1/2 (15 oz) pkg sliced pound cake
> 10 (12-inch) wooden skewers
> 1 (16 oz) pkg strawberries, hulled
> 2 (6 oz) pkgs blueberries or blackberries

To a medium heatproof bowl, add the cream cheese. Microwave 30 sec., until soft. Zest half of the lemon into bowl. Add the sugar and milk and stir until smooth. Refrigerate until ready to serve.

Cut the pound cake into 1-inch cubes. Onto the skewers, thread the strawberries, pound cake, and blueberries or blackberries in a red, white, and blue pattern. Serve skewers with dip.
