2 limes

1 1/2 cups all-purpose flour

3/4 cup granulated sugar, divided

1/2 cup (1 stick) unsalted butter, cold and cut into small pieces

2 tsp cornstarch

1 (12 oz) bag frozen blueberries

Preheat oven to 375°F. Line an 8x8-inch baking pan with foil and coat with the cooking spray. Into a large bowl, grate 1 tsp zest from the limes. Add the flour, ½ cup sugar, cinnamon, baking powder, and salt and toss to combine. Add the butter and, using a fork or your fingers, thoroughly blend butter into dry ingredients until coarse crumbs form and mixture holds together when squeezed. Press half of crumb mixture into prepared pan in an even layer.

Into a separate large bowl, squeeze 2 tbsp juice from limes. Add remaining ¼ cup sugar, cornstarch, and a pinch of salt and mix to combine. Add the frozen blueberries and toss until evenly coated. Pour blueberry mixture over crumb mixture in pan.

Squeeze remaining crumb mixture into small streusel-like clumps and scatter over blueberries in an even layer. Bake 55–60 min., until top is lightly golden and filling is bubbling. Let cool completely before cutting into 12 bars.
