Ingredients

> 1 lb sweet potatoes
> 1 (16 oz) pkg Nature's Promise Free from Boneless Pork Chops
> 1 tbsp olive oil
> 1/2 tsp garlic powder
> 1/2 tsp onion powder
> 1 tbsp fresh parsley
> 1/2 tbsp fresh rosemary
> 1/2 tbsp fresh thyme
> 3 tbsp milk
> 2 tbsp unsalted butter
> 1 tbsp chopped chives

Steps

1
Bring a large pot of salted water to a boil on high. Meanwhile, peel and cut sweet potatoes into 1-inch cubes. Cook potatoes 12 min., until soft.
2
Set broiler to high. Pat pork chops dry with paper towels. Toss with olive oil, garlic powder, onion powder, salt, and pepper. Place pork chops on a rimmed baking sheet and broil 10–12 min., flipping pork halfway through, until a meat thermometer reads 145°F
3
When potatoes are done, drain in a colander. Chop parsley, rosemary, and thyme. Into food processor, add sweet potatoes, milk, butter, parsley, rosemary, thyme, salt, and pepper. Pulse until almost smooth. Serve with broiled pork chops and garnish with chives.
