4 lb pork spare ribs

2 tbsp brown sugar

2 tsp kosher salt

1 tsp chili powder

1 tsp garlic powder

1 tsp Italian seasoning

1 cup bourbon BBQ sauce

Make the rub by mixing together the brown sugar, salt, chili powder, garlic powder and Italian seasoning. Sprinkle this mixture over the rib and rub into the meat. Cover and place into the refrigerator for 30 minutes.

Preheat grill by turning one half of the grill onto the lowest heat setting, and the other half onto medium high heat. Place the ribs on the cooler side of the grill and cook turning over every 15 minutes for 1 hour.

After the meat is cooked and browned, glaze the rib with the BBQ sauce and cook for an additional 30 minutes, turning every 10 minutes or until the meat reaches an internal temperature of 145°F or the ribs begin to fall off the bone. Serve immediately.
