1 stick unsalted butter

½ cup sugar

1 tbsp vanilla sugar or 1 tsp vanilla extract

2 eggs

3 tbsp skim milk

1 cup self-rising flour

Whipped cream, for decorating

Sprinkles, for decorating

Preheat the oven to 350°F.

Line a standard cupcake tin with cupcake papers.

Using a hand mixer, cream butter, sugar and vanilla sugar until well combined, about 4 min.

Add the eggs one at a time and beat until combined.

Gently warm the milk. Fold the self-raising flour into the sugar mixture until just incorporated. Add the warm milk and fold to combine.

Use 2 spoons to insert the batter into the cavities of the cupcake tin. Place in the center rack of the oven for 20 min., or until a toothpick comes out clean.

Remove from the oven and leave in the pan to cool for 5 min. Place on a cooling rack and cool for at least 2 hours.

Decorate with whipped cream and sprinkles.
