Pulled Oyster Mushroom Sandwiches

These hearty vegetarian mushroom sandwiches are inspired by Southern pulled pork sandwiches. This easy plant-forward recipe is a great way to get in more vegetables for dinner.

Ingredients

> 5 (4 oz) pkgs oyster mushrooms
> 5 tbsp barbecue sauce
> 2 tbsp mayonnaise
> 1 tbsp honey
> 1 tbsp apple cider vinegar
> 1 cup coleslaw mix
> 1 tbsp chopped parsley
> 4 hamburger buns, toasted if desired

Preheat oven to 400°F. Pull the oyster mushrooms apart into strings and add to a greased 9x13-inch baking dish. Season with salt and pepper. Add the BBQ sauce and toss to coat. Bake for 20 min., until mushrooms are dark brown and fragrant.

Meanwhile, in a medium bowl, whisk together the mayonnaise, honey, and vinegar. Season with salt and pepper. To bowl, add the coleslaw mixture and parsley, tossing to coat.

Remove mushrooms from oven and stir again to combine. Divide among the buns and top with coleslaw.

Tips

Substitute the slaw mix and dressing with 1 cup store-bought coleslaw, if desired.
