Bread and Butter Pudding

This luxurious treat makes a great brunch dish or dessert. Top with Greek yogurt or ice cream, if desired.

> 6 dried apricots
> 6 slices white bread
> 4 tbsp butter, room temperature
> 6 tbsp apricot or peach jam
> 1/4 cups raisins
> 3 eggs
> 1/2 cup half-and-half
> 1/2 cup milk
> 2 tbsp sugar
> 1/2 tsp grated nutmeg


Preheat the oven to 350 ° F.
Thinly slice the apricots.
Spread the bread slices with the butter and jam and cut diagonally in half.
Grease a 7x11-inch or 9x9-inch baking dish and arrange the bread slices in an overlapping pattern. Scatter with the sliced dried apricots and raisins.
In a large bowl, whisk together the eggs, cream, milk, vanilla and sugar.
Pour the egg-cream mixture over the bread in the baking dish. Sprinkle lightly with nutmeg.
Bake 30-40 min., or until golden brown. Serve hot or warm.
