Broiled Salmon with Sautéed Kale and Dates

Mustard-soy–glazed salmon and tender sautéed kale with warm dates makes for a restaurant-worthy meal that you can whip up with just five ingredients in only 15 minutes.

Ingredients

> 4 (6 oz) salmon fillets
> 1 tbsp Dijon mustard
> 1 1/2 tbsp reduced-sodium soy sauce
> 1 (12 oz) pkg Nature's Promise® Organic Kale
> 1/4 cup pitted dates, chopped

Arrange oven rack 6 inches from broiler. Heat broiler on high. Line a rimmed sheet pan with foil and lightly grease. Pat the salmon dry and season with salt and pepper. In a small bowl, stir together the mustard and soy sauce.

Place salmon skin-side down on prepared baking sheet. Brush half of mustard glaze over top of salmon. Broil salmon 5–7 min., until top is glossy and edges are opaque. Brush a second layer of glaze and broil 1 min. more to caramelize.

Meanwhile, if needed, remove any large stems from kale. In a 12-inch skillet on medium, heat 2 tbsp olive oil. Add the dates and cook 30–60 sec. to warm through. Add kale and season with salt and pepper. Sauté 6–8 min., until wilted and tender. Serve salmon with sautéed kale.
