Buffalo Chicken Salad

This no-cook salad makes a great lunch or light supper for when you need to get something satisfying on the table in a flash.

> 3 stalks celery
> 1 head Boston lettuce
> 1/4 cup Louisiana-style hot sauce
> 1/4 cup ranch dressing
> 2 tsp white wine vinegar
> 3 cups shredded rotisserie chicken
> 1 cup shredded (matchstick) carrots
> 1/4 cup crumbled blue cheese


Thinly slice the celery. Separate the leaves on the head of lettuce. Tear any larger leaves.
In a large bowl, whisk the hot sauce, ranch dressing, and vinegar. Add the chicken, carrots, and celery. Toss to combine. Season with salt to taste.
Divide the lettuce among 4 plates. Top with chicken mixture. Sprinkle the blue cheese on top.
