Ingredients

2 tbsp olive oil

3/4 cup diced yellow onion

1 cup diced celery

1 tbsp minced garlic

2 (14 oz) pkgs Nature's Promise® Organic Butternut Squash

1 tsp ground coriander
>
1 tsp ground cumin
>
1/2 tsp ground cinnamon
>
4 cups low-sodium vegetable broth

Heat the oil in a heavy-duty pot over medium heat. Add the onion and celery and cook until the vegetables are soft and tender, 6–8 min. Stir in the garlic and cook for 1 min. Stir in the squash, coriander, cumin, cinnamon, salt, and pepper. Cook for 1 min.

Add the broth and bring to a boil. Reduce the heat so soup is at a simmer and cook until the squash is tender, 10–15 min. Carefully transfer about 2 cups of the soup to a blender or food processor and purée until smooth. Stir purée back into the soup and serve immediately.
