Apples with Walnut Hummus

Set this dish of walnut hummus with apple slices out at your next family get-together and watch it disappear. Walnuts add a new depth of flavor to traditional hummus that pairs perfectly with the crunchy sliced apples.

Ingredients

> 1/2 cup walnuts
> 3 tbsp olive oil or walnut oil
> 15.5 oz can  garbanzo beans, drained and rinsed
> 1/2 tsp orange zest
> 1/2 cup orange juice
> 1/4 tsp salt
> 1 tsp ground cumin
> 1 pinch cayenne pepper (or more to taste)
> 2 apples cut into eight wedges
> Lemon juice

Toast walnuts in a non-stick pan over medium heat until golden brown and fragrant, about 5 minutes. Cool to room temperature. Combine toasted walnuts with oil and puree in food processor or blender until smooth. Add garbanzos, orange juice and zest, salt and cumin and continue to blend to an even, smooth consistency.

Add cayenne pepper to desired heat level. Makes about 2 cups. Slice apples and rub cut surfaces with lemon juice. Serve hummus in a small bowl and arrange apple wedges around bowl, alternating red and green wedges.
