Ingredients

4 tbsp olive oil

1/4 cup Cajun seasoning

1 lb Nature's Promise® Grass Fed Strip Steak

1 large red pepper

8 green onions

1 lemon, juiced

2 avocados

In a small bowl, mix 2 tbsp of the oil with the Cajun seasoning and brush over both sides of the steak. Let steaks sit 15 min. at room temperature.

While steaks marinate, halve the red pepper and remove the stem and seeds. Trim the green onions. Brush the pepper and onions on all sides with the remaining oil. Heat a ridged grill pan over high heat and grill the vegetables for 5 min., using tongs to flip them halfway through. Transfer to a plate and let cool.

Add the steak to the grill pan and cook about 6 min. Sprinkle with 1 tbsp lemon juice, flip and grill 5 min. longer. Let rest 10 min., loosely tented with foil.

Slice the grilled pepper into strips and cut the onions into large pieces. Halve the avocados, remove the pits and scoop out the flesh using a large spoon. Slice the avocado and add to the peppers and onion along with 1 tbsp lemon juice, salt (in moderation) and pepper. Taste and add more lemon juice if desired. Slice the steak against the grain and serve with the salad.
