> 1 (5 oz) box quinoa, prepared according to package directions
> 2 cups rotisserie chicken, shredded
> 1 (5 oz) bag arugula
> 3 Roma tomatoes
> 1 cucumber
> 2 red bell peppers
> 1 avocado
> 4 oz light citrus vinaigrette
Cook quinoa according to package directions.
Chop all vegetables into bite-sized pieces and combine with chicken, quinoa, and vinaigrette in large bowl.
