Carrot Slaw with Jalapeño Dressing

Ingredients

> 1/4 cup olive oil
> 1/4 cup mayonnaise
> 2 tbsp apple cider vinegar
> 2 tsp Dijon mustard
> 2 jalapeños
> 1 Granny Smith apple
> 2 (10 oz) shredded (matchstick) carrots
> 1/2 cup thinly sliced red onion
> 1/4 cup chopped cilantro leaves

In a large bowl, whisk together the oil, mayonnaise, vinegar, and mustard until well combined. Season with salt and pepper.

Stem, seed, and finely mince the jalapeños. Cut the apple into thin planks, stack a few planks at a time, and slice lengthwise into thin matchsticks. Repeat with remaining planks. Add jalapeño and apple to bowl, along with the carrots, onion, and cilantro. Season with salt and pepper. Toss to combine. Serve immediately or refrigerate until time to serve.
