Cauliflower and Kale Mini Pizzas

These veg-centric pita pizzas offer just enough ricotta and mozzarella to feel indulgent.

Ingredients

> 3 tbsp olive oil
> 2 tsp minced garlic
> 1 (12 oz) pkg Nature's Promise Organic Kale
> 1 cup  cauliflower florets
> 4 pitas
> 1 cup part-skim ricotta cheese
> 1/2 tsp Italian seasoning
> 1 cup shredded mozzarella 
> pinch crushed red pepper flakes

Preheat oven to 425°F. In a large nonstick pan, heat 1 tbsp oil on medium-high. Add garlic and cook 1 min. In batches, stir in kale and cook 6–7 min., until kale is entirely wilted. Season with salt and pepper and remove from heat.

Coarsely chop cauliflower into small bite-size pieces. Add to a small bowl with remaining 2 tbsp oil, salt, and pepper. Toss to coat.

Arrange pitas on a baking sheet. Spread ricotta cheese on pitas in even layer. Season with Italian seasoning, salt, and pepper.

Distribute cauliflower and kale among pitas. Top with mozzarella. Bake 14–16 min., until bottoms are golden brown and mozzarella is melted. Garnish with red pepper flakes.
