2 whole wheat or regular hamburger buns

2 tbsp olive oil, divided

1/2 tsp garlic powder, divided

1 1/4 lbs lean ground beef

1/2 cup ketchup
>
1/4 cup light mayonnaise
>
1 tbsp sweet relish
>
2 tsp apple cider vinegar
>
1 head red leaf lettuce
>
1 (8 oz) pkg shredded Cheddar cheese
>
3 Roma tomatoes
>
1/3 cup chopped dill pickles

Preheat oven to 350°F. Line a rimmed baking sheet with parchment. Using a serrated knife, cut buns into 1” pieces. In a medium bowl, gently toss bread with 1 tablespoon oil and garlic powder. Season with salt and pepper. Spread bread onto prepared baking sheet. Bake bread until lightly browned, 15 minutes, tossing halfway through. Let cool.

In a 12” skillet, heat remaining 1 tablespoon oil over medium-high. Add beef and season with salt and pepper. Cook until browned, 8 to 10 minutes, stirring and breaking up the meat with a wooden spoon. Spoon off any excess fat.

Meanwhile, in a small bowl, whisk ketchup, mayonnaise, relish and vinegar. Season with salt and pepper. Tear lettuce into bite-size pieces. Divide lettuce among 4 shallow bowls. Spoon beef over lettuce. Top with cheese, tomatoes, pickles and croutons. Drizzle sauce over salads.
