> 1 egg
> 1/3 cup almond butter
> 3 tbsp honey
> 1/2 tsp cinnamon
> 1 cup quick cooking oats
> 2 tbsp tapioca flour
> 1/2 tsp baking powder
> 1/2 cup trail mix of choice
Preheat oven to 350° F, and line a baking sheet with parchment paper.
Combine egg, almond butter, honey, and cinnamon in a large bowl, and mix until smooth.
Gently fold in oats, tapioca flour, and baking powder.
Add trail mix, and mix until evenly incorporated.
Using a medium cookie scoop, transfer cookie dough to the baking sheet in even scoops. Lightly flatten each cookie with a spatula or spoon, and bake 9-12 minutes or until slightly golden brown.
Remove from oven, let cool, and enjoy!
