> 1 (15.9 oz) pkg Nature's Promise white microwave rice
> 3 tomatoes
> 4 tbsp olive oil
> 2 cup diced red onion
> 3 bell peppers
> 1 (0.75 lb) pkg boneless skinless chicken breasts
Prepare the rice according to package directions. Quarter the tomatoes. Heat 2 tbsp olive oil in a large sauté pan and cook the onion over medium-high heat, 2 min. Add the tomatoes and cook for 4 min. Stir into cooked rice.
Meanwhile, cut the bell peppers into 2-inch pieces. Cut the chicken into 1-inch pieces and thread onto skewers with peppers. Brush with remaining olive oil and season with salt. Cook on a grill or grill pan for about 9 min., turning occasionally. Chicken is cooked through when an internal thermometer reads 165°F. Serve skewers with rice.
