Sheet Pan Sausage with Apples, Cranberries, and Greens

Dinner comes together in under 40 minutes with this easy sheet pan recipe. Chicken sausage pairs perfectly with tender apples, bursts of cranberries, and roasted greens.

Ingredients

> 1 cup fresh or frozen, thawed cranberries
> 1 tbsp sugar
> 1 (16 oz) bag pre-washed collard greens or kale
> 3 tbsp olive oil, divided
> 2 crisp medium apples
> 1 (12 oz) pkg Nature's Promise® Sweet Apple Chicken Sausage
> 1 small red onion

Preheat oven to 400°F. In a small bowl, toss the cranberries with the sugar and set aside. On a large rimmed baking sheet, spread the collard greens into an even layer. Drizzle with 1 tbsp oil and season with salt and pepper. Massage to coat and spread into an even layer.

Core and cut each apple into 8 pieces. Season with salt and pepper. Using a fork, poke the sausages a few times. Moving greens as needed, add cranberries, onion, apples, and chicken sausage to baking sheet. Drizzle with remaining 2 tbsp oil and season with salt and pepper. Roast 20–30 min., until greens and apples are tender, turning sausages and stirring greens halfway through. Serve immediately.
