> 2 tbsp olive oil
> 1 (16 oz) pkg fresh stir-fry vegetable blend
> 1 (16 oz) pkg sliced baby bella mushrooms
> 1 1/2 lbs sea scallops, thawed
> 2 tsp lemon pepper seasoning
Preheat air fryer to 400°F. In a 10-inch skillet, heat oil on medium-high. Add the vegetable blend and mushrooms. Season with salt and pepper. Sauté 10–12 min., until all vegetables are tender, stirring occasionally.
Meanwhile, remove the small side muscles from the scallops, then pat dry with paper towels. Season on both sides with salt and lemon pepper. Add scallops to air fryer. Cook 6 min., until golden brown, flipping halfway through. Serve scallops with vegetables.
