6 slices thick cut bacon, chopped

1/2 (8 oz) pkg cream cheese, softened

3 green onions, thinly sliced plus additional for garnish (optional)

1 cup shredded Cheddar cheese

2 tbsp ranch seasoning

12 (6-inch) corn tortillas
>
2 tbsp olive oil

Preheat oven to 400°; line rimmed baking pan with nonstick aluminum foil. In large skillet, cook bacon over medium-high heat 5 minutes or until crisp, stirring occasionally; transfer to paper towel-lined plate.

In large bowl, stir cream cheese, onions, chicken, Cheddar cheese, seasoning and bacon. Makes about 1 3/4 cups.

In batches, on griddle or in large skillet, cook tortillas over medium-high heat 4 minutes or until lightly browned, turning once. Cover to keep warm.

Lay tortillas on work surface; place 2 tablespoons plus 1 teaspoon cheese mixture on bottom half of each tortilla. Starting at bottom, tightly roll up tortillas around filling; place, seam side down, on prepared pan. Brush tops of taquitos with oil; bake 20 minutes or until golden brown and heated through. Makes 12 taquitos.

Serve taquitos with hot sauce and/or dressing sprinkled with onions, if desired.
