Chicken-Cherry Salad Sandwiches

These colorful and flavorful chicken salad sandwiches are a perfect way to use fresh cherries in a savory recipe.

> 2 1/2 cups rotisserie chicken, shredded
> 1/3 cup finely chopped celery
> 1/3 cup chopped red apple
> 1/4 cup light mayonnaise
> 1/4 cup nonfat Greek yogurt
> 2 chopped tbsp fresh parsley
> 1 tbsp apple cider vinegar
> 1/2 cup fresh cherries, pitted
> Croissants or whole-wheat bread, to serve


In a medium bowl, combine the chicken, celery, apple, mayonnaise, yogurt, parsley, and vinegar. Season with salt and pepper. Mix well to combine. Gently stir in the cherries.
When ready to serve, halve each croissant, if using. Divide chicken salad among croissant halves or bread slices.
