Chicken Fried Rice with Broccolini and Cashews

Fried rice is a favorite dinner option for when you’re pressed for time. This one features lean chicken and loads of fresh veggies.

Ingredients

> 1 (8.8 oz) pkg Nature's Promise® Free From Whole Grain brown rice
> 1 bunch broccolini
> 1 lb boneless, skinless chicken breast
> 1 large egg
> 2 tbsp olive oil
> 1/2 cup diced carrots
> 1/2 cup chopped onions
> 1/4 cup cashews
> 1/4 cup low-sodium soy sauce
> 1 tsp Sriracha hot sauce

Cook the rice according to package directions. Meanwhile, cut the broccolini into 1-inch pieces and dice the chicken into small cubes. Crack the egg into a small bowl and whisk.

In a large skillet or wok, heat 1 tbsp olive oil over high heat. Cook the chicken until brown and cooked through, about 6 min. Transfer chicken to a plate and cover loosely with foil. Add remaining 1 tbsp oil and sauté the carrots, onions, and broccolini for 4 min. Chop the cashews.

Push veggies to one side of the pan and add the egg. Scramble until cooked through and mix in with vegetables. Return chicken to the pan and mix in the rice. Add soy sauce and Sriracha and toss to coat the chicken, vegetables, and rice.

Divide among 4 bowls and top with cashews.
