1 (15.9 oz) pkg Nature's Promise® Brown Rice

1 lb boneless chicken tenderloins

1/4 cup olive oil

1 (8.8 oz) pkg cooked red beets

4 green onions
>
2 tbsp red wine vinegar

1 cup cooked lentils
>
1 pint blackberries
>
1/2 cup chopped walnuts
>
2 cups watercress

Prepare rice according to package directions. Meanwhile, heat a grill pan over medium-high heat. Place the chicken in a bowl and coat with 2 tbsp olive oil. Season with salt and pepper. Cook on the grill pan for 10–12 min., flipping halfway.

Cut the beets into ½-inch cubes and slice the green onions. In a large bowl whisk the remaining olive oil and the red wine vinegar. Add the rest of the ingredients to the large bowl and toss to coat. Divide among 4 containers and store in the refrigerator.
