Instant Pot® BBQ Sauce

This homemade BBQ sauce has all the flavor of one cooked for hours but takes only 30 minutes. Use it on chicken, ribs, pork, or baked beans.

Ingredients

> 1 tbsp vegetable oil
> 1 onion, chopped
> 1 cup tomato puree
> 1/2 cup honey
> 1/2 cup distilled white vinegar
> 1 tsp garlic powder
> 1 tsp cumin
> 2 tsp hot sauce
> 2 tsp liquid smoke

In an Instant Pot®, heat the oil on the sauté function on high. Add the chopped onion and cook 5–6 min., until edges are browned.

Meanwhile, in a small bowl, combine the tomato purée, ½ cup water, honey, and vinegar. Season with salt and pepper. Add the garlic powder, cumin, hot sauce, and liquid smoke. Mix well to combine.

Pour mixture into Instant Pot®. Scrape up any brown bits on bottom of pot with a wooden spoon. Seal lid and set to high pressure. Cook 10 min. Let natural release 10 min.

In batches in a blender or in Instant Pot® with an immersion blender, purée sauce until smooth. Season with salt and pepper. Transfer to a resealable container and keep in refrigerator for up to 10 days.

Add more or less hot sauce to make your perfect sauce.
