Slice the croissants open and lightly toast cut-sides in toaster oven or under broiler for 30 sec.

In a medium bowl, stir together the mayonnaise, garlic powder, lemon juice, salt, and pepper.

Chop the chicken and celery. Core and finely chop the apple. Add chicken, celery, and apple to mayonnaise. Stir until well combined. Divide chicken salad among croissants and top with arugula.
