1 red bell pepper

3/4 lb fresh chorizo sausages

1 (20 oz) bag frozen diced potatoes, thawed

1/2 tsp garlic powder

1 1/2 tsp chili powder

Remove and discard the seeds from the red pepper and chop. Thinly slice the green onions. Remove chorizo meat from casings.

In a large nonstick skillet, cook chorizo, pepper, and diced onion on medium-high 5–7 min., until chorizo is browned, stirring constantly and using back of wooden spoon to break up chorizo.

Stir in diced potatoes, garlic powder, chili powder, salt, and pepper. Add ¾ cup water. Cook 8–10 min., until potatoes are hot, stirring constantly and adding ¼ cup more water if mixture is too dry.

Meanwhile, in another large nonstick pan, heat the oil on medium-high. Add eggs and fry 2–3 min., until whites are set but yolks are still runny. Top hash with eggs and garnish with green onions.
