Cilantro Lime Grilled Chicken

One whole fresh lime is the key ingredient to this zesty chicken recipe. Prepare the marinade the night before or as little as half an hour before grilling. Strewn with cilantro, this is a stellar barbecue dish, delicious on its own or shredded for salads, tacos, or fajitas.

Ingredients

> 1 whole lime for zest and juice
> 1 tbsp fresh cilantro, plus extra for garnish
> 1 1/2 tbsp minced garlic
> 1 tsp onion powder
> 2 tbsp olive oil
> 4 boneless, skinless chicken breasts (about 1 lb total)

Grate zest and squeeze the juice from the lime into a glass or ceramic bowl. Add cilantro, garlic, onion powder and olive oil. Place chicken in a baking dish. Fully coat each piece with lime marinade. Cover with plastic wrap and chill for 30 minutes or overnight. Preheat the grill to medium heat or preheat the broiler. Place the chicken on the grill or broiler pan. Discard any remaining marinade. Cook chicken about 10 minutes on each side or until internal temperature reaches 165°F.

Garnish with extra cilantro and lime wedges, serve immediately.
