Ingredients

> 1 (16 oz) pkg Nature's Promise ® Italian-style meatballs, thawed
> 1 tbsp canola oil
> 1 (16 oz) pkg frozen chopped onions and pepper mix, thawed
> 1 (13.5 oz) can canned lite coconut milk
> 1/4 cup green or red curry paste
> 1 (6 oz) bag baby spinach
> 2 (8.8 oz) pkgs Nature's Promise ® 90 Second Jasmine Rice

In a microwave-safe bowl, microwave the meatballs on high 3–4 min., until warmed through. Meanwhile, in a deep 12-inch skillet, heat the oil on medium-high. Add the onion and pepper mix. Season with salt and pepper. Cook 6–8 min., until vegetables are tender.

To skillet, add the coconut milk and curry paste, whisking to combine. Season with salt and pepper. Add the spinach and stir until wilted, then add meatballs. Season with salt and pepper. Reduce heat to a simmer.

Meanwhile, microwave the rice according to package directions. Serve the meatballs and sauce with rice.
