Ingredients
>
2 cloves garlic
>
2 pints grape tomatoes
>
1 tbsp olive oil
>
3 sprigs thyme
>
1/2 cup pitted Kalamata olives
>
2 tbsp capers
>
4 (4 oz) cod fillets
>
1 (15.9 oz) pkg Nature's Promise® Long-Grain Rice
>
2 tbsp parsley
>
1 (15 oz) can lentils
Steps
1
Preheat oven to 400°F. Thinly slice 2 garlic cloves.
2
Put sliced garlic, tomatoes, oil, thyme, salt, and pepper on a large rimmed baking sheet. Toss to combine. Roast 30 min., until tomatoes are caramelized and softened, stirring once halfway through.
3
Let cool slightly and transfer tomatoes to a small bowl. Chop olives and capers and stir into the tomatoes. Season with salt and pepper.
4
Arrange fillets among 4 large parchment paper squares, placing a fillet to one side of each sheet. Season with salt and pepper. Spoon tomato mixture over cod, then fold excess paper over. Fold edges and roll tightly to seal. Place packets on a baking sheet and bake 18 min., until cod is cooked through.
5
Meanwhile, heat rice according to package directions. Finely chop parsley and drain lentils. In a large microwave-safe bowl, microwave lentils 2–3 min., until warm. Stir in rice and parsley.
6
Carefully open fish packets. Serve with lentils and rice.
