Ingredients

1 (12 oz) pkg Nature's Promise® Atlantic Salmon Fillets, thawed

1/2 tsp dried oregano
>
1 (5 oz) pkg 50/50 salad mix
>
1 (14 oz) can quartered artichoke hearts
>
1 small cucumber, sliced into half-moons
>
1/2 small fennel bulb, thinly sliced
>
1 (6 oz) pkg red radishes, quartered
>
1 cup pitted Kalamata olives
>
1 cup tzatziki

Add salmon to a small microwave-safe bowl. Sprinkle oregano over salmon and season with salt and pepper. Cover bowl and cook on high 3 to 4 minutes. Flake salmon into large chunks.

To a large serving platter or bowl, add salad mix. Arrange artichoke hearts, cucumber, fennel, radishes, olives, and salmon on top of lettuce.

In a small bowl, whisk together tzatziki and 2 tablespoons to ¼ cup water, until desired consistency. Drizzle tzatziki over salad and serve.
