Ingredients

> Pam ® Olive Oil No-Stick Cooking Spray
> 1 (16 oz) pkg dry lasagna noodles, broken into 2-inch pieces
> 1 (10 oz) pkg chopped spinach
> 1 lb Italian pork sausage
> 1 small onion, chopped (1 cup)
> 3 cloves garlic, chopped
> 1/4 cup Hunt's ® Tomato Paste
> 1 (28 oz) Hunt's ® Crushed Tomatoes
> 1 tsp dried oregano
> 1 tsp dried basil
> 1 tsp kosher salt
> 1/2 tsp ground black pepper
> 1 (15 oz) container ricotta cheese
> 1 egg
> 1/2 cup shredded Parmesan cheese, divided
> 3 cups shredded mozzarella cheese

Steps

1
Preheat oven to 425°F. Spray 17x11-inch rimmed baking sheet with cooking spray. Bring a large pot of water to a boil. Cook noodles according to package directions. Microwave spinach according to package directions.
2
Meanwhile, cook sausage with onion in a 12-inch skillet over medium heat, stirring frequently to break up the pieces. Stir in garlic and tomato paste. Cook 2 minutes, until tomato paste is starting to brown. Pour in crushed tomatoes, oregano, basil, salt, and pepper. Simmer sauce 10 minutes.
3
Drain spinach and place on a clean kitchen towel. Squeeze out as much water as possible. Place spinach in a medium bowl with ricotta, egg, and 1/4-cup Parmesan cheese and stir to combine.
4
Drain pasta and return it to the pot. Pour sauce, remaining 1/4-cup Parmesan and 1/2-cup mozzarella into pot with noodles and stir well. Pour pasta onto baking sheet.
5
Dollop spinach mixture over pasta. Sprinkle remaining mozzarella cheese on top. Bake sheet pan lasagna 15 to 20 minutes, until cheese is bubbling and lightly browned.
