1 (16 oz) pkg dry lasagna noodles, broken into 2-inch pieces

1 (10 oz) pkg chopped spinach

1 lb Italian pork sausage
>
1 small onion, chopped (1 cup)

3 cloves garlic, chopped
>
1/4 cup Hunt's ® Tomato Paste
>
1 (28 oz) Hunt's ® Crushed Tomatoes
>
1 tsp dried oregano
>
1 tsp dried basil
>
1 tsp kosher salt
>
1/2 tsp ground black pepper
>
1 (15 oz) container ricotta cheese
>
1 egg
>
1/2 cup shredded Parmesan cheese, divided
>
3 cups shredded mozzarella cheese

Preheat oven to 425°F. Spray 17x11-inch rimmed baking sheet with cooking spray. Bring a large pot of water to a boil. Cook noodles according to package directions. Microwave spinach according to package directions.

Meanwhile, cook sausage with onion in a 12-inch skillet over medium heat, stirring frequently to break up the pieces. Stir in garlic and tomato paste. Cook 2 minutes, until tomato paste is starting to brown. Pour in crushed tomatoes, oregano, basil, salt, and pepper. Simmer sauce 10 minutes.

Drain spinach and place on a clean kitchen towel. Squeeze out as much water as possible. Place spinach in a medium bowl with ricotta, egg, and 1/4-cup Parmesan cheese and stir to combine.

Drain pasta and return it to the pot. Pour sauce, remaining 1/4-cup Parmesan and 1/2-cup mozzarella into pot with noodles and stir well. Pour pasta onto baking sheet.

Dollop spinach mixture over pasta. Sprinkle remaining mozzarella cheese on top. Bake sheet pan lasagna 15 to 20 minutes, until cheese is bubbling and lightly browned.
